Born in Maidstone, Gibbons' first professional club was Charlton Athletic before moving to Watford.
From the Hornets she was loaned to Gillingham, and then joined Brighton & Hove Albion, where she won 14/15 Player of the Season, and Millwall.
Gibbons returned to the Gils in 2016/17, and Brighton in 2017. With the Seagulls she competed in their first Women's Championship campaign and later helped secure promotion to the Women's Super League.
In the 2023/24 season, Gibbons' eight assists were a Women's Championship high, as Palace won promotion to the Women's Super League.
